Tasty Tuesday

As you guys know by now, I am an avid baker and if it weren't for my 12 year old son having pre diabetes (he's not overweight at all, apparently it's hereditary) I would bake really yummy things more often.  I suppose I could learn to bake with whole wheat and gluten free products, and I do experiment a good bit, but I prefer to simply limit my baking to once every couple of weeks to once a month.  This way, it is more of a treat than a habit.  We started in January trying to adopt a healthier lifestyle, and while I haven't "arrived" yet, we are much healthier and focus on eating a lot more oatmeal, flax, fresh veggies, fruit, leaner cuts of meats and less white products.

All of that being said, if it is a white product, bread, rolls, pizza dough, pie crust, biscuits, big pretzels-you get the picture- I really rock at this.  Not really tooting my own horn, I just can bake.  I can't boil water, but I can bake.  Today, I am NOT baking, but I thought I would share my favorite recipe with you.  This recipe is rather universal in that I use it both for pizza and for pretzels.  I think I just heard all professional bakers take a gasp in unison, but hey, this is how I roll here in the country.

This recipe is so simple, easy, quick and cheap you will NEVER purchase premade dough again.  Heck, it is quicker than waiting 20 minutes an hour for delivery. 

Universal Dough (pretzel, pizza)

2 1/2 cups of White Lily Flour (if you can't find White Lily in the North, buy whatever, I like White Lily, it is light and makes for really fluffy non-tough biscuits)

2 1/4 tsp of instant or quick rising yeast (I use the instant in a jar, but you can use 1 packet of quick rising Fleishmans)

1 tsp of salt

3 Tbsp of Sugar or Honey (I use Honey whenever I have it)

2 Tbsp Extra Virgin Olive Oil

1 cup of HOT, tap water.  ( you can use a thermometer if you need to, but if it is hot enough you don't want to leave your hand in it but not so hot you got burned on contact, that's the right temp)

Mix the first four ingredients together and make a well, "hole" in the middle.  Add oil and water in the hole and stir until it is all combined in a ball and cover with a kitchen towel or some Saran wrap that has been sprayed with baking spray to keep it from sticking to the dough.  Let sit 10-15 minutes.  This is really important because overworked dough won't roll out.  It has to sit and rest.  Preheat your oven to 450 & after dough has rested, either roll it out on a pizza stone for pizza or separate it in baseball sized balls for pretzels. 

For pizza, proceed to top with whatever your little heart desires and bake for ten minutes (maybe longer depending on your oven, maybe less, watch it)....when crust is golden brown on the bottom or cheese is all the way melted, it's done.

For pretzels, Roll it out into a long worm (hehee I have kids and we love to make worms here) and shape into a pretzel.  You can brush it with water and apply sea salt, brush it with butter and cinnamon/sugar, or any other topping you like.  I prefer them plain dipped in honey mustard sauce, but to each his own!

Monday Morning Coffee

I absolutely love this time of year!  It is warm, sunny and beautiful during the day and at night it is nice and cool enough to need a quilt to sleep with.  I snuggle down in the bed with two of my favorite men at night and it is just great cuddling weather.  Thankfully my 2 year old son still feels the need to stay in the bed with mama and cuddle because neither my husband or other 3 kids are much into cuddles!

 Nothing is better when it is cold outside then waking up to a hot pot of coffee.  This morning I chose to go simple, just some splenda and skim milk rather than my favorite creamer, and I am in quiet heaven.  The kids are on the school bus en route to school, my 2 year old has completed his two pancakes and piece of sausage (thanks Jimmy Dean for your Happy, but not so healthy breakfast!) and is now watching Spongebob, and my DH is still snoozing away in the bedroom letting his weary body rest after working 36 hours this weekend.

I have to run into town later on to do some errands and I think this weather calls for a trip to the coffee shop.  While we aren't large enough to tout a Starbucks or really any other chain coffee store, we do have a small specialty store in town.  I am excited just pondering whether I will have a nice frothy cappuccino or if I will have a latte.  Choices choices........
